Peach Cucumber Smoothie
Oops, I froze a cucumber in my fridge! What a perfect inspiration for this delicious Peach Cucumber Smoothie. While I love cooking for my personal chef clients, I equally love finding quick and tasty treats for myself. This Peach Cucumber Smoothie is super refreshing and perfect for breakfast, lunch or mid-day snack. Especially after cooking all day in a warm kitchen, this smoothie is ultra-hydrating and satisfying.
That frozen cucumber turned out to be a happy accident on a scorching hot July day. I highly recommend you try this smoothie during any season, but especially during those warm summer months.
This smoothie is just sweet enough, ultra creamy, and hydrating. Double the recipe, freeze half in a ziploc bag or ice cube tray, and blend later for a fast and easy snack.
Makes 1 large smoothie (~20 ounces)
1/2 frozen cucumber, washed and cut into rings
1/2 bag frozen peaches (6oz or so)
1/2 can full-fat coconut milk
1-3 tbsp honey to taste
Use a blender to pulse the cucumber and peaches to a fine texture. Set aside 2-4 tbsp of this mix for garnish.
Add the coconut milk, making sure to get some of the liquid and some of the solid coconut from the can. Add the honey. Blend until thoroughly combined and a creamy texture, about 45 seconds.
Serve with the reserved cucumber peach relish.
Suggested variations:
Add fresh herbs from your garden like mint or lavender.
Try a pinch of cinnamon and cayenne.
For a caffeine boost, blend in 2 ice cubes of frozen green tea.
