EASIEST Salsa Braised Chicken Tacos

Serves 4
1.5# chicken breasts
1 15oz jar salsa (red or green)
1 taco seasoning packet
1 tsp salt
a few grinds black pepper
1 lime cut into 8 wedges
Shredded Mexican cheese
Corn or flour tortillas
Sour cream or thick plain yogurt
Minced cilantro
Preheat oven to 350*F. Grease a square baking dish or oval casserole dish and add chicken breasts. Season chicken breasts by sprinkling with taco seasoning, salt, and pepper. Use your hands to coat the chicken in spices. Open the jar of salsa and pour into the baking dish. Fill the jar half way with water and add the water to the baking dish. Turn the chicken breasts so they are fully coated in salsa and press down lightly to submerge in the liquid. Cover the pan with aluminum foil or casserole lid. Place chicken into the preheated oven and bake for 1.5- 2 hours until very tender. The chicken should easily shred when you insert a fork. Remove chicken from the oven and uncover. Allow to cool for 10 minutes. Use two forks to thoroughly shred the meat.
Serve as chicken tacos with tortillas, cheese, lime wedges, sour cream/yogurt, cilantro and any other taco toppings you enjoy.
